The Phoenicia Malta has launched the 2025 summer season with a vibrant new menu,
weekly live music and relaxed day-to-night dining for both hotel guests and locals at
Bastion Pool, Bar & Restaurant.
Making the most of the Maltese summertime, Bastion Pool, Bar & Restaurant sits at the edge of the hotel’s seven-acre gardens, boasting a bar, dining area and an infinity pool
set against the backdrop of Valletta’s bastion walls, with stunning views stretching out
to the harbour.
Open daily, with extended hours on Tuesdays, Wednesdays and Thursdays for the
popular Nights Under the Stars, Bastion Pool, Bar & Restaurant is now welcoming guests for another season of sunshine, flavour and understated luxury, with an extended
programme designed to elevate every moment.
Throughout summer, Tuesday and Thursday evenings from 7pm until 10pm will see the
return of the popular BBQ. This refined take on alfresco dining features Maltese
antipasto, live grilling and delectable desserts such as coconut and minted chocolate
delice, an orange and cinnamon crème brûlée or imqaret with vanilla ice cream.
By day, Bastion Pool, Bar & Restaurant serves a full lunch menu, with a host of mouth-watering Mediterranean-inspired sushi and seafood platters, seasonal salads and
signature cocktails, all available poolside or at shaded garden tables. Wednesday nights
also offer an à la carte dinner service until 10pm – which guests can enjoy paired with
live music from the Jazz Quartet with Dominic Galea, amid the ambience of a balmy
summer evening spent in five-star style, overlooking Marsamxett Harbour as the sun
sets.
The weekly entertainment line-up between 7.30pm and 10pm also includes Jimmy
Bartolo and Friends on Tuesdays, as well as Acoustic Evenings with Amelia every
Thursday.
Those seeking summer revitalisation can meanwhile opt for the hotel’s outdoor spa
package, which includes a 50-minute Harmonising Massage in the hotel’s gorgeous
